LOW FAT CARROT FRUIT CAKE

1 - Carrot - 150 g
2 - Raisins - 1\4 cup
... 3 - Dried apricot chopped - 1\4 cup (or instead use + 1\4 cup raisins)
4 - Honey - 1\3 cup
5 - Cinnamon pwd - 1\4 tsp
6 - Nutmeg pwd - 1\4 tsp
7 - Wheat flour - 3\4 cup
8 - Bicarbonate soda - 1\2 tsp
9 - Walnuts - 1 tbsp chopped
10 - Water - 3\4 cup
11 - Margarine or Butter - 1 tbsp
Peel the carrot. Chop roughly & process in grinder till minced.
Combine carrots, raisins, apricot, honey, margarine, water, cinnamon pwd & nutmeg pwd.
Cook on a low flame for 10 minutes & cool.
Preheat oven to 160 degree C.
Add the remaining ingredients to the cooked carrot mix.
Mix well & pour in a well greased loaf tin.
Bake in preheated oven till done(about 45 minutes).
